One of the items which can be collected for a user is his/her e-mail address, as above example shows. The intelligence of that object looks for defaults set in the general user object (the User::Identity). It is able to translate the utf-8 user data into the correct character set, and then generate an ascii string from that as required by the MIME RFCs. This is a quite complicated task, but not for the module user.
